Description

Sausage kolaches, or klobasnicky, are a beloved Czech-American comfort food that combines savory richness with tender, yeast-raised dough. These hearty pastries feature plump sausages encased in a soft, slightly sweet bread that becomes golden and crisp during baking. The contrast between the juicy, spiced meat and the fluffy, buttery exterior creates an irresistible bite. Perfect for breakfast, brunch, or a satisfying snack, they bring a warm, home-style flavor to any table. Made with simple pantry staples like flour, yeast, milk, and eggs, this recipe yields a generous batch ideal for family gatherings or Sunday dinners. Serve them fresh from the oven, brushed with melted butter for an extra layer of richness.

Ingredients

Directions

  1. In a large bowl, combine warm water, sugar, yeast, 1 cup warm milk, and 1 3/4 cups flour.
  2. Beat the mixture thoroughly until smooth.
  3. Cover the bowl and let the batter stand for 1 hour, or until bubbly and frothy.
  4. Add 1/2 cup Crisco (or shortening), 1/4 cup warm milk, salt, 2 egg yolks, and 2 1/4 cups flour to the yeast mixture.
  5. Beat well until a soft, elastic dough forms.
  6. Cover the dough and let it rise in a warm place until double in bulk.
  7. Punch down the dough to release air bubbles.
  8. Divide the dough into portions suitable for wrapping around each sausage link.
  9. Roll or pat each dough portion flat into an oval or circle.
  10. Place a cooked sausage link in the center of each dough piece.
  11. Fold the dough over the sausage to enclose it completely, pinching the edges to seal.
  12. Place the sealed kolaches on a baking sheet, leaving space between them.
  13. Brush the tops with melted butter.
  14. Let the kolaches rise again for about 20-30 minutes until puffy.
  15. Bake in a preheated oven at 400 degrees F (204&# 194;°C) for about 15 minutes, or until golden brown.
  16. Remove from oven and immediately brush with additional melted butter.

Note

Prepare the sausage links by cooking them first (frying or baking) before wrapping them in the dough. Cut them to your desired length if they are too large for the dough portions.

Ensure the water and milk are warm (about 105-110ðF) to activate the yeast without killing it.

If the dough feels too sticky, add a little more flour, one tablespoon at a time. If it feels too stiff, add a splash of warm milk.

These kolaches are best served fresh, but can be stored in an airtight container at room temperature for up to 2 days. Reheat in a warm oven for a few minutes to restore softness.

You can substitute Crisco with an equal amount of unsalted butter for a richer flavor.
