Ingredients

Directions

  1. Bone the chicken, separating the meat from the carcass. Set the meat aside.
  2. Chop the chicken carcass into small pieces.
  3. In a large oven-safe skillet, melt 3 tablespoons of butter over medium-high heat. Add the chopped carcass and sauté until browned.
  4. Add chopped carrot, onion, and minced shallots to the skillet. Sauté for a few minutes until softened.
  5. Pour in the Gewürztraminer wine and cognac. Add fresh thyme and the chopped tomato (peeled, seeded, and chopped).
  6. Bring to a boil and reduce the mixture until only about 2 tablespoons of liquid remain.
  7. Add the chicken stock and continue to reduce until approximately 1/2 cup of liquid remains.
  8. Remove and discard the chicken bones and vegetable solids from the skillet.
  9. Stir in the heavy whipping cream. Bring the sauce to a boil, then strain through a fine-mesh sieve into a clean container or bowl to ensure smoothness. Season to taste and keep warm.
  10. Return the skillet to medium-high heat. Add 3 tablespoons of butter. Once melted, add the boneless chicken pieces.
  11. Sauté the chicken until browned on both sides.
  12. Transfer the skillet to a preheated 400ðF (200ðC) oven. Bake for 15 minutes, or until the chicken is cooked through.
  13. Remove the chicken from the oven and place on a platter. Tent loosely with foil to keep warm.
  14. In the same skillet, using the remaining pan juices, add the cleaned and sliced leeks. Sauté for 5 minutes until tender. Remove leeks from the pan.
  15. Add the final tablespoon of butter to the skillet. Add the halved seedless grapes and sauté for 1 minute just to heat through.
  16. To serve, divide the sautéed leeks among 6 plates.
  17. Place the cooked chicken atop the leeks.
  18. Spoon the warm Gewürztraminer cream sauce over the chicken. Garnish with the warm grapes.
