Ingredients

Directions

  1. Skin and seed 3 pounds of tomatoes, then cut them into small pieces.
  2. Place the prepared tomatoes in a stainless steel or enameled pan and cook slowly over low heat for about 30 minutes to reduce the liquid.
  3. Drain any excess liquid from the tomatoes; you should have about 2 cups of reduced tomatoes. Set aside.
  4. Cut the okra into 1/4-inch rounds, discarding the tough stems and tips. You should have about 6 cups of cut okra.
  5. If using fresh corn, cut the kernels from the cob using a sharp knife. If using frozen corn, defrost it thoroughly.
  6. Heat the unsalted butter and safflower oil in a large skillet over medium heat.
  7. Add the chopped onions and okra to the skillet.
  8. Sauté, stirring frequently, until the onions are wilted and the okra begins to brown at the edges, about 10-15 minutes.
  9. Stir in the reduced tomatoes and salt. Cook for another 5 minutes, allowing the flavors to meld.
  10. Add the corn kernels to the skillet and cook for 3-4 minutes until heated through.
  11. Season with freshly ground pepper and adjust salt to taste before serving.
