Description

This Savory Chicken with Pine Nuts is a delightful Chinese-inspired stir-fry that delivers bold flavors in minutes. The dish combines tender, marinated chicken breast with crisp bamboo shoots and earthy pine nuts, all coated in a glossy, umami-rich sauce made from hoisin, oyster sauce, and chili bean paste. The result is a perfect balance of textures: the chicken stays juicy while the pine nuts add a delightful crunch. It pairs beautifully with steamed rice or noodles, making it an ideal choice for busy weeknight dinners.

Directions

  1. Place diced chicken breast in a bowl and mix with cornstarch, water, Chinese wine, and soy sauce. Let marinate for 10-15 minutes.
  2. In a separate small bowl, whisk together soy sauce, water, hoisin sauce, oyster sauce, chili bean sauce, sugar, and sesame oil to create the sauce.
  3. Bring a pot of water to a boil. Blanch the diced bamboo shoots for 30 seconds to remove any canned flavor, then drain well and set aside.
  4. Heat a wok or large skillet over medium-high heat. Add vegetable oil.
  5. Add the pine nuts to the hot oil and stir-fry until golden brown and fragrant, about 1-2 minutes. Remove immediately with a slotted spoon and place on a paper towel to drain excess oil.
  6. Wipe out the wok if necessary, then add the remaining vegetable oil. Heat until shimmering.
  7. Add the minced garlic and stir-fry for 10 seconds until fragrant.
  8. Add the marinated chicken to the wok. Stir-fry on high heat until the chicken turns white and is nearly cooked through, about 2-3 minutes.
  9. Pour in the prepared sauce mixture and add the blanched bamboo shoots. Stir-fry for another 1-2 minutes until the sauce thickens and coats the ingredients.
  10. Return the toasted pine nuts to the wok along with the chopped green onions. Toss everything together for 30 seconds to combine.
  11. Serve immediately while hot.
