Scallop Ceviche recipe image

This vibrant Scallop Ceviche is a refreshing seafood dish that relies on the power of citrus to “cook” the delicate scallops, resulting in a tender, opaque texture without heat. The combination of fresh lime and lemon juice creates a bright, zesty base that cuts through the natural sweetness of the bay scallops. Finely diced red onion and bell pepper add a satisfying crunch, while fresh cilantro and minced chile provide aromatic depth and a gentle kick of heat. It is an excellent choice for warm-weather gatherings, light lunches, or as an elegant appetizer.

Description

This vibrant Scallop Ceviche is a refreshing seafood dish that relies on the power of citrus to "cook" the delicate scallops, resulting in a tender, opaque texture without heat.

Directions

  1. Wash and dry the bay scallops; pat them completely dry with paper towels.
  2. Zest one lime and one lemon using a fine grater or zester, then set the zest aside for garnish.
  3. Juice the remaining limes and the lemon to yield 1/2 cup lime juice and 1/4 cup lemon juice.
  4. In a large non-reactive mixing bowl, combine the fresh citrus juices, olive oil, minced chile, minced garlic, and a pinch of salt.
  5. Add the bay scallops, diced red bell pepper, diced red onion, and chopped cilantro to the bowl.
  6. Gently toss everything together until the scallops are evenly coated with the citrus mixture.
  7. Cover the bowl and let it marinate at room temperature for 1 hour, stirring occasionally to ensure even curing.
  8. Transfer the bowl to the refrigerator and chill for an additional 1 hour to firm up the texture and meld flavors.
  9. Before serving, taste the ceviche and add more salt if needed.
  10. Garnish with the reserved julienned lime zest and serve immediately.
