Seafood Croquettes
Description
These classic seafood croquettes offer a delightful contrast of textures, featuring a crunchy, golden-brown exterior and a luscious, creamy interior. The filling combines tender cooked fish or shellfish with a rich béchamel sauce infused with nutmeg, fresh parsley, and chives, all bound together with butter and flour. They are perfect for appetizers, party platters, or as an elegant side dish. Serve them hot with a zesty tomato mayonnaise or aioli for dipping.Ingredients
Directions
-
Melt the butter in a small skillet over medium heat.
-
Add the minced onion and diced celery, and cook, stirring occasionally, for 5 minutes or until soft.
-
Stir in the flour to form a paste (roux).
-
Gradually add the milk and nutmeg, cooking for another minute or so until the mixture thickens into a béchamel sauce.
-
Scrape the sauce into a mixing bowl and let it cool slightly.
-
Add the cooked seafood, parsley, chives, salt, and cayenne pepper to the bowl.
-
Using two forks, gently mash the seafood into the sauce mixture until well combined.
-
Place the bread crumbs on a flat plate.
-
Drop tablespoon-sized dollops of the seafood mixture into the bread crumbs.
-
Roll each dollop in the bread crumbs, then shape between your palms to form smooth balls or cylinders.
-
Set the formed croquettes aside on a plate while you finish shaping the rest.
-
Fill a medium-sized heavy skillet (cast iron is ideal) with about 1 1/2 inches of oil.
-
Heat the oil over medium heat to 350°F (175°C).
-
Carefully lower the croquettes into the hot oil, working in batches to avoid crowding.
-
Fry until golden brown and cooked through, about 3 minutes per side.
-
Remove the croquettes with a slotted spoon and drain on paper towels.
-
Arrange on a serving platter and serve immediately with tomato mayonnaise or aioli.
