Ingredients

Directions

  1. Cut the Cajun sausage or kielbasa into 1-inch slices.
  2. In a large Dutch oven, sauté the sausage over medium-high heat until browned on all sides, about 5-7 minutes.
  3. Remove the browned sausage from the pot and set aside on a plate.
  4. Add half of the olive oil (approx. 2-3 tablespoons) to the same pot.
  5. Add the okra and cook over medium heat, stirring occasionally, until it becomes slightly soft, about 5 minutes.
  6. Add the remaining olive oil, diced onions, green bell pepper, red bell pepper, and minced garlic to the pot.
  7. Stir well and cook the vegetables for 10 minutes, until the onions are translucent and softened.
  8. Pour in the chicken stock and crushed tomatoes. Stir in the cumin, cayenne pepper, salt, black pepper, and bay leaf.
  9. Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 30 minutes to allow flavors to meld.
  10. Return the cooked sausage to the pot. Add the raw shrimp and sea scallops.
  11. Simmer gently for 5 minutes, or until the shrimp are pink and scallops are opaque.
  12. Gently fold in the cooked lobster meat, crabmeat, and chopped fresh parsley.
  13. Heat through for 2-3 minutes without boiling vigorously to prevent toughening the seafood. Remove bay leaf before serving.
