Seven Bean Soup
Description
This robust Seven Bean Soup is a testament to the power of slow cooking. By combining a variety of dried beans, such as adzuki and Anasazi, with savory aromatics like fresh ginger, garlic, and celery, you create a complex depth of flavor that canned soups simply cannot match. The addition of ketchup, BBQ sauce, and crushed tomatoes provides a rich, slightly tangy, and smoky backdrop that complements the earthy beans perfectly. Ideal for cold winter evenings or as a make-ahead meal, this soup thickens beautifully over time, making it even more delicious on the second day. It is a comforting, vegan-friendly dish that requires minimal effort but yields maximum warmth and satisfaction.Ingredients
Directions
-
Wash the dried beans thoroughly, picking over any debris or stones.
-
Place beans in a large bowl and cover with water by at least 2 inches. Soak overnight.
-
In the morning, drain and rinse the soaked beans well.
-
Transfer beans to a large stockpot and add 18 cups of cold water.
-
Add the fresh grated ginger to the pot.
-
Bring the mixture to a full boil over high heat.
-
Reduce heat to maintain an active simmer and cook until beans are tender, about 1.5 to 2 hours.
-
Add the chopped onions, celery, garlic, green chili, lemon pepper, chili powder, BBQ sauce, ketchup, and both cans of crushed tomatoes.
-
Bring the soup back to a boil, then reduce heat to low.
-
Simmer uncovered for an additional 3 hours, stirring occasionally and adding more water if the soup becomes too thick.

Note
Storage: This soup freezes exceptionally well. Allow it to cool completely before transferring to airtight containers or freezer bags. It can be stored in the freezer for up to 3 months.
Bean Varieties: While adzuki and Anasazi beans are recommended for their texture and flavor, you can use any combination of dried beans you have on hand, such as black beans, kidney beans, pinto beans, or navy beans.
Flavor Development: Like many bean soups, the flavors meld and improve overnight. Consider making this a day ahead for the best taste.
Consistency: If you prefer a thicker soup, you can mash some of the beans against the side of the pot during the final hour of cooking, or blend a portion of the soup and return it to the pot.
