-
Peel and devein shrimp, cutting them in half lengthwise. Reserve the shrimp shells.
-
Combine water, clam juice, and reserved shrimp shells in a large saucepan. Bring to a boil and simmer for 15 minutes.
-
Strain the stock through a fine-mesh sieve to remove shells and solids. Reserve the liquid.
-
Heat olive oil in a heavy large Dutch oven over high heat.
-
Add the sliced sausage and sauté for 1 minute until lightly browned.
-
Add onion, bell pepper, and garlic. Sauté for 2 minutes until vegetables begin to soften.
-
Stir in tomatoes, bay leaves, thyme, hot pepper sauce, and the reserved shrimp stock.
-
Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
-
Add the chopped collard and mustard greens to the pot. Simmer until wilted but still bright green, about 3 minutes.
-
Add the shrimp to the gumbo. Simmer until just tender and opaque, about 1 minute longer.
-
Turn off the heat. Stir in the file' powder gently.
-
Season to taste with salt, pepper, and additional hot pepper sauce if desired.
-
Mound a large spoonful of cooked rice in the center of each serving bowl. Ladle the gumbo over the rice.
-
Garnish with chopped green onions and serve immediately.
