Description

This elegant Shrimp Soup combines plump fresh shrimp with a savory dashi stock infused with sake and ginger. The result is a light yet deeply flavorful broth that highlights the natural sweetness of the seafood. Perfect for a quick weeknight dinner or a refined appetizer, this dish comes together in under 30 minutes. The addition of crisp snow peas or tender spinach adds a pop of color and texture. Serve it as a comforting main course or a sophisticated starter that brings restaurant-quality simplicity to your table.

Ingredients

Directions

  1. Peel the shrimp, keeping the heads and tails intact. Using a small knife, make a small incision along the mid-section in the back of the shrimp and devein by gently pulling out the intestinal tract.
  2. Blanch the vegetables (snow peas or spinach) in lightly salted water for 2 minutes. Drain and portion into individual serving platters. Set aside.
  3. Place the shrimp in a pan with the dashi stock, sake, sugar, soy sauce, and ginger.
  4. Cook over high heat for 3 to 4 minutes, or until the shrimp turns pink.
  5. Serve immediately on top of the blanched vegetables. Serve the warm broth on the side if desired.

Note

You can substitute basic dashi stock with 1/2 teaspoon dashi stock granules dissolved in 1 cup of water.

For a heartier meal, you can add Chinese cabbage to the blanching water along with the snow peas or spinach.

Ensure the shrimp is cooked just until it turns pink to avoid it becoming tough and rubbery.
