Description

Shrimps Peppino is a vibrant, theatrical dish that brings the warmth of the Mediterranean to your dinner table. This recipe features succulent large shrimp quickly sauted in a fragrant blend of olive oil, butter, and garlic. The shrimp are then tossed with chopped fresh tomatoes, basil, oregano, and a splash of dry white wine, creating a bright, savory sauce. The dish is served over sturdy homemade croutons, which soak up the delicious garlic-butter juices. Its an elegant yet simple meal perfect for date nights or impressing guests. The combination of tender seafood, fresh herbs, and crunchy bread creates a satisfying texture and bold flavor profile that feels both rustic and refined.

Ingredients

Directions

  1. Preheat oven to 400F (200C).
  2. Cut thick slices of French bread into quarters and drizzle with olive oil.
  3. Bake bread on a baking sheet until golden brown and crisp, turning halfway through, to make croutons.
  4. Pat shrimp dry and lightly sprinkle with flour, shaking off excess.
  5. In a large skillet or chafing dish, heat olive oil and butter over medium heat until bubbling.
  6. Add quartered garlic cloves and cook, stirring, for 2-3 minutes to infuse the butter with garlic flavor.
  7. Remove garlic cloves from the skillet and discard.
  8. Add shrimp to the skillet and cook briefly on one side until they turn pink.
  9. Flip shrimp and cook the other side for another minute.
  10. Add white wine, chopped tomatoes, basil, oregano, salt, and pepper to the skillet.
  11. Cook for 2 minutes longer, stirring frequently, until shrimp are just cooked through.
  12. Place toasted croutons in and around the shrimp in the skillet.
  13. Turn croutons to let both sides absorb some of the butter-garlic sauce.
  14. Serve immediately, spooning the shrimp, croutons, and tomato sauce onto plates.
