Slim Red & Green Pasta
Description
This light yet satisfying pasta dish brings the bright flavors of Italy to your table without the heavy cream or cheese. The star of the show is roasted red bell pepper, which provides a sweet, smoky depth that pairs perfectly with protein-rich garbanzo beans. Fresh green onions and a blend of basil and tarragon add aromatic freshness, while a touch of briny capers cuts through the sweetness for a balanced bite. It is a fantastic weeknight dinner option that is both vegan and low-fat, making it an excellent choice for health-conscious cooks or those looking for a refreshing vegetarian main.Ingredients
Directions
-
Preheat the broiler. Place the red bell peppers in a 10-by-15-inch baking pan.
-
Broil the peppers about 3 inches below the heat source, turning frequently, until the skins are blackened and blistered all over, about 15 to 17 minutes.
-
Remove the peppers from the oven and let them cool enough to handle. Peel off the blackened skins, remove the stems, and rinse off the seeds.
-
Finely chop the roasted peppers using a food processor or a sharp knife.
-
In a 3- to 4-quart saucepan over medium-high heat, combine the chopped peppers, sliced green onions, drained garbanzo beans, basil, tarragon, and capers.
-
Stir the vegetable mixture often until it is steaming hot and the flavors meld together, about 5 to 7 minutes. Keep warm.
-
Meanwhile, fill a large 5- to 6-quart pot about 3/4 full with water. Cover and bring to a rolling boil over high heat.
-
Add the pasta to the boiling water. Cook uncovered, stirring occasionally, until the pasta is barely tender to the bite (al dente), about 7 to 8 minutes.
-
Drain the pasta well and transfer it to a wide, shallow serving bowl.
-
Spoon the warm pepper and garbanzo bean mixture evenly over the pasta.
-
Toss gently to combine. Season to taste with salt and freshly ground black pepper before serving.
