Slow Cooker Daube of Beef
Description
This Slow Cooker Daube of Beef is a comforting, rustic main dish that delivers deep, savory flavors with minimal effort. Tender cubes of lean beef chuck are braised slowly with aromatic shallots, garlic, and carrots in a savory blend of dry red wine and optional brandy. The dish is elevated with classic Provençal spices like thyme, cloves, and sage, plus a bright note from orange peel. The result is a thick, glossy sauce that coats the meat and vegetables beautifully.Directions
-
Trim fat from the beef chuck and cut into 1 1/2-inch cubes.
-
Toss the beef cubes with the 1/4 cup of flour until evenly coated.
-
In a 3-quart or larger slow cooker, combine the shallots, garlic, carrots, chopped ham, orange peel, and bay leaf.
-
Add the floured beef cubes to the slow cooker on top of the vegetables.
-
Sprinkle the beef with peppercorns, thyme, ground cloves, and sage.
-
Drizzle the balsamic vinegar over the meat, then pour in the red wine (or broth) and brandy if using.
-
Cover and cook on the Low setting for 8 to 9 hours, until the beef is very tender when pierced with a fork.
-
Remove and discard the bay leaf and orange peel strip from the stew.
-
In a small bowl, blend the 2 tablespoons of flour with the 2 tablespoons of butter to form a smooth paste.
-
Stir the flour-butter mixture into the slow cooker to thicken the sauce.
-
Increase the slow cooker setting to High.
-
Cover and cook for an additional 20 minutes, stirring 2 or 3 times, until the sauce has thickened.
-
Taste the stew and season with salt as needed.
-
Garnish with chopped parsley before serving.
