  1. Trim the tops and outer leaves of the artichokes with scissors, cutting off the top third and tips of remaining leaves to remove spikes. Cut stalks level with the base.
  2. Place artichokes in a kettle of boiling salted water and simmer for 35 to 40 minutes, or until a leaf pulls out easily.
  3. Drain the artichokes, refresh under cold running water, and let stand upside down until cool.
  4. Saute green onions in 2 tablespoons of olive oil slowly until just tender.
  5. Stir in chopped mushrooms and cook for 2-3 minutes.
  6. Stir in bread crumbs and grated Parmesan cheese (or vegan alternative).
  7. Transfer the mixture to a bowl and let stand until cool.
  8. Stir in white wine, lemon juice, and the remaining 4 tablespoons of olive oil.
  9. Season well with garlic powder, salt, and pepper.
  10. Prepare each artichoke by pulling out center leaves to reach the choke, then scrape out all the hairy choke with a teaspoon.
  11. Fill each artichoke cavity with the dressing mixture and top with chopped parsley.
  12. Wrap each artichoke in foil, leaving the top open.
