Description

These Snail Fritters are a sophisticated take on classic French appetizers, offering a delightful contrast between the crisp, golden exterior and the tender, savory snails within. The batter, lightened by folded-in egg whites, creates a delicate crunch that complements the rich flavor of the escargot. Marinated in olive oil and fresh herbs like parsley, tarragon, and chives, the snails absorb aromatic notes that elevate the dish from simple to sublime. Perfect for wine dinners, holiday gatherings, or as an elegant starter for a Mediterranean-inspired meal, these fritters bring restaurant-quality flair to your kitchen. They pair beautifully with crisp white wines and a simple green salad.

Ingredients

Directions

  1. In a small bowl, mix the snails with 2 tablespoons of olive oil and the chopped fresh herbs (parsley, tarragon, chives, and chervil). Cover and let marinate for 1 hour at room temperature.
  2. In a medium bowl, whisk together the egg yolks, 1 tablespoon of olive oil, flour, salt, and pepper until smooth.
  3. Gradually add warm water, one tablespoon at a time, whisking continuously until the batter reaches a smooth, creamy consistency. Let the batter rest for 10 minutes.
  4. In a separate clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the rested batter using a spatula, being careful not to deflate the mixture.
  6. Heat the vegetable oil in a deep fryer or large heavy pot to 350F (175C).
  7. Drain the marinated snails, reserving the herb oil if desired for drizzling later.
  8. Drop a handful of snails into the batter and toss gently to coat each one individually.
  9. Carefully remove the coated snails one by one and drop them into the hot oil. Fry 2 at a time if using petits-gris, or small batches of Burgundy snails, to avoid overcrowding.
  10. Fry until golden brown and crispy, about 2-3 minutes per batch.
  11. Remove fritters with a slotted spoon and drain on paper towels.
  12. Serve immediately, garnished with fried parsley.
