Description

Sole Veronique is a classic French preparation that highlights the delicate flavor of Pacific sole with a luxurious, creamy sauce. The dish balances the sweetness of seedless grapes with the earthiness of sliced mushrooms, creating a sophisticated yet comforting meal. The fish is gently poached to retain its tender texture before being smothered in a velvety reduction of wine, cream, and butter. Finished under the broiler with a hint of paprika, it offers a beautiful presentation and a rich, savory taste. This elegant main course is perfect for special dinners or when you want to elevate a weeknight meal with minimal effort but maximum flavor impact.

Directions

  1. Rinse the fish fillets with cold water and pat dry thoroughly with paper towels.
  2. In a large skillet, combine water, white wine, quartered onion, bay leaf, peppercorns, and 1/2 teaspoon salt.
  3. Bring the liquid to a boil, then reduce the heat to maintain a gentle simmer.
  4. Add the fish fillets to the liquid, cover the skillet, and simmer for 4-5 minutes, or until the fish flakes easily when tested with a fork.
  5. Carefully remove the fish from the skillet using a slotted spatula and transfer to a well-greased 12 x 8-inch glass baking dish or oven-proof platter.
  6. Strain the cooking liquid to remove solids, return it to the skillet, and boil rapidly until reduced to about 3/4 cup. Set aside.
  7. In a small saucepan over medium heat, melt the butter.
  8. Whisk in the flour and cook for 1 minute to form a roux.
  9. Gradually whisk in the cream and the reduced cooking liquid, ensuring no lumps form.
  10. Continue cooking, stirring constantly, until the sauce thickens sufficiently to coat the back of a spoon.
  11. Stir in the dry sherry, lemon juice, Worcestershire sauce, and additional salt and pepper to taste.
  12. Fold in the drained grapes and sliced mushrooms.
  13. Pour the hot sauce evenly over the fish fillets in the baking dish.
  14. Sprinkle the top with paprika.
  15. Place under a preheated broiler 3-4 inches from the heat source for 1-2 minutes, or until the sauce is bubbly and delicately browned.
