It balances sweetness with a subtle tang, making it perfect for birthdays, holidays, or any occasion calling for a show-stopping dessert.

Ingredients

Directions

  1. Preheat oven to 350°F (175°C). Grease and line the bottoms of two 9-inch round cake pans with waxed paper.
  2. In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
  3. Melt the baking chocolate and let it cool slightly.
  4. Add the shortening, sour cream, vanilla, eggs, water, and melted chocolate to the dry ingredients.
  5. Beat with an electric mixer at low speed, scraping the bowl constantly, for 30 seconds.
  6. Increase speed to high and beat for an additional 3 minutes, scraping the bowl occasionally.
  7. Pour the batter evenly into the prepared cake pans.
  8. Bake for 35 minutes, or until a wooden toothpick inserted into the center comes out clean.
  9. Cool the cakes in the pans on wire racks for 10 minutes.
  10. Remove cakes from pans and cool completely on wire racks.
  11. To make frosting, combine softened butter, confectioners' sugar, and sour cream in a mixing bowl.
  12. Blend the frosting ingredients well until smooth.
  13. Melt the frosting chocolate, let it cool, and add it to the frosting along with vanilla.
  14. Beat the frosting until smooth and creamy.
  15. Place one cake layer on a serving plate and spread with half of the frosting.
  16. Top with the second cake layer.
  17. Frost the sides and top of the cake with the remaining frosting.

Note

**Leveling the Layers:** If one cake layer rises higher than the other, trim the domed top off with a sharp knife to create a flat surface. Place the trimmed layer upside down as the bottom layer. This creates an even cake that sits flat on the plate. The trimmings can be enjoyed by the cook or kids!

**Storage:** Store the cake covered at room temperature for up to 2 days, or in the refrigerator for up to 5 days. Bring to room temperature before serving for the best texture.

**Ingredient Tips:** Ensure the sour cream and eggs are at room temperature before mixing for a smoother batter. Use high-quality baking chocolate for the best flavor depth.
