Description

This traditional sour rye bread delivers a deep, tangy flavor and a satisfyingly dense crumb, characteristic of European-style baking. The combination of rye flour, caraway seeds, and a brief fermentation process creates a complex aroma that pairs beautifully with hearty soups, stews, or strong cheeses. The crust turns golden and crisp in the oven, while the interior remains moist and chewy. It is an excellent choice for making rustic sandwiches or simply enjoying with butter. While it requires a few days for the starter to develop, the result is a superior homemade bread that captures the authentic taste of artisanal bakeries. Serve fresh from the oven for the best texture and flavor.

Ingredients

Directions

  1. In a large bowl, dissolve half of the yeast in the warm water.
  2. Add the rye flour to the yeast mixture and stir until well combined.
  3. Cover the bowl tightly with plastic wrap.
  4. Let the mixture stand at room temperature for 3 days to allow the sour flavor to develop.
  5. After 3 days, add the remaining yeast and the warm beer to the starter; mix well.
  6. Stir in 3 cups of the all-purpose flour, sugar, half of the caraway seeds, salt, and the lightly beaten egg.
  7. Beat the mixture at moderate speed until smooth, about 2 minutes.
  8. Add the vegetable oil and beat at high speed for 2 minutes.
  9. Gradually add enough of the remaining flour to form a soft, manageable dough.
  10. Turn the dough out onto a floured surface.
  11. Knead in the remaining flour and knead for about 5 minutes until smooth and elastic.
  12. Place the dough in a greased bowl, cover, and let rise until doubled in size.
  13. Punch down the dough and divide it into two equal portions.
  14. Shape each portion into a braided loaf.
  15. Place loaves on a baking sheet, brush with the egg white and water mixture, and sprinkle with the remaining caraway seeds.
  16. Let the loaves rise again until puffy.
  17. Bake in a preheated 350&# 194;°F (175ðC) oven for about 40 minutes, or until golden brown and hollow-sounding when tapped.

Note

Storage: Allow bread to cool completely on a wire rack before slicing. Store in a plastic bag at room temperature for up to 3 days, or freeze for longer storage.

Variations: For a different flavor profile, substitute the caraway seeds with poppy seeds, sesame seeds, or a combination of seeds on the outside of the braids.

Fermentation: The 3-day standing time is crucial for developing the characteristic sour taste of the rye starter. Ensure the mixture is kept at a consistent room temperature during this period.

Kneading: If the dough feels too sticky, add flour one tablespoon at a time. If it feels too dry, add water one teaspoon at a time.
