Note
**Starter Care:** Feed your sourdough starter with 1/2 cup all-purpose flour and 1/2 cup water, then let it stand at room temperature for at least 4 hours (or overnight) before using. Store the starter in the fridge when not in daily use.
**Rye Variation:** For a rye sourdough, substitute 1/2 cup of the bread flour with 1/2 cup rye flour and add 1 teaspoon of caraway seeds to the dry ingredients.
**Manual Baking Tip:** If you prefer a hand-shaped loaf, you can use the dough cycle only. Once kneaded, shape the dough into long ropes or loaves. Let them rise until doubled, then bake at 350ðF (175ðC) for 20 minutes with a pan of hot water on the bottom rack for steam, then flip and bake for another 10 minutes to crisp the bottom.
**Storage:** Store cooled bread in a paper bag or bread box to maintain crust texture. For longer storage, wrap tightly and freeze for up to 3 months.
