  2. Prepare mashed potatoes according to package instructions using 3/4 cup water. Once prepared, add the 3/4 cup milk, 1/4 cup melted butter, 2 eggs, and sourdough starter to the potatoes. Stir until well blended.
  3. Add the potato mixture to the dry ingredients. Beat on medium speed for 2 minutes, scraping down the sides of the bowl.
  4. Add 1 1/2 cups flour and beat on medium speed for another 2 minutes.
  5. Using a heavy mixer paddle or a wooden spoon, gradually add enough of the remaining flour to form a stiff dough.
  6. Turn dough out onto a floured surface. Knead for 5 to 20 minutes until smooth and elastic, adding small amounts of flour as needed to prevent sticking.
