Directions
-
Warm a 1 1/2 quart glass, ceramic, rigid plastic, or stainless steel container by filling it with hot water, letting it stand for several minutes, then wiping it dry.
-
Heat 1 cup of skim or low-fat milk in a saucepan until it reaches 90-100&# 194;°F (32-38ðC) on a thermometer.
-
Remove the milk from heat and stir in 3 tablespoons of plain, unflavored, low-fat yogurt until fully incorporated.
-
Pour the mixture into the warm container, cover it tightly, and let it stand in a warm place (80-100ðF) for 18 to 24 hours.
-
Check the starter; it should have the consistency of yogurt, with a curd formed and the mixture not flowing readily when tilted. If clear liquid rises to the top, stir it back in.
-
Gradually stir 1 cup of all-purpose flour into the starter until the mixture is smooth.
-
Cover tightly and let stand in a warm place (80-100ðF) for 2 to 5 days, or until the mixture is full of bubbles and has a good sour smell.
-
During this time, if clear liquid forms, stir it back into the starter. If the liquid turns pink, discard all but 1/4 cup of the starter and thin the remainder with a mixture of 1 cup each of warm milk (90-100ðF) and flour.
-
Cover tightly and let stand in a warm place until bubbly and sour-smelling; the starter is now ready to use.
