Description

This unique Southwest Cheesecake is a savory delight that blends classic cheesecake textures with bold Mexican flavors. The base is a crisp, buttery crust made from finely crushed tortilla chips. The filling combines creamy cream cheese with sharp cheddar and mild green chilies, offering a rich and smooth mouthfeel. A layer of seasoned ground beef mixed with refried beans adds heartiness and depth. Topped with a cool layer of sour cream and fresh, crunchy vegetables like bell peppers, onions, and olives, this dish balances heat, creaminess, and freshness. It is perfect for parties, potlucks, or as an unconventional appetizer that surprises and satisfies guests.

Note

This recipe is savory, not sweet. Ensure you have savory expectations for the cream cheese and cheddar filling.

Storage: Cover tightly and refrigerate leftovers for up to 3 days. The texture may become softer after refrigeration.

Substitutions: You can use corn chips instead of tortilla chips for a more traditional corn flavor. For a spicier kick, add more jalapeños or use chipotle peppers in adobo sauce in the beef mixture.

Tip: Make sure the green chilies are well-drained to prevent a watery filling.

Variation: For a vegetarian version, omit the ground beef and use additional refried beans or seasoned black beans.
