  1. Rack Of ribs should be cut lengthwise across the bones.
  2. Have the butcher do this with his meat saw.
  3. ~~Cook and stir onion in oil in 2-quart saucepan 2 minutes.
  4. Stir in ground red chiles, juniper berries, garlic and salt.
  5. Cover and cook 5 minutes, stirring occasionally.
  6. Stir in chocolate until melted.
  7. Pour water, vinegar and tomato paste into food processor workbowl fitted with steel blade or into a blender container.
  8. Add onion mixture and sugar; cover and process until well blended.
  9. Heat oven to 375 Degrees F (191&# 194;°C).
  10. Cut between pork back ribs to separate.
  11. Place in a single layer in roasting pan, pour sauce evenly over pork.
  12. Bake uncovered 30 minutes; turn pork.
  13. Bake until done, about 30 minutes longer
