Description

This comforting Italian-inspired dish combines tender medium shrimp and earthy mushrooms with spaghetti tossed in a luxurious, velvety sauce. The base relies on a classic technique of tempering beaten eggs with cream, parmesan, and a hint of anchovy for deep umami flavor. The result is a rich, creamy coating that clings to every strand of pasta without the heaviness of a traditional béchamel. Aromatic garlic and fresh scallions add brightness, while dry mustard provides a subtle kick. Perfect for a cozy weeknight dinner or a quick special occasion meal, this recipe delivers restaurant-quality results with pantry staples. It’s satisfying, elegant, and comes together in under an hour, making it a reliable favorite for seafood lovers.

Ingredients

Directions

  1. Bring a large pot of water to a boil for the pasta.
  2. Shell and devein the shrimp, then set aside.
  3. Slice the mushrooms and coarsely chop the scallions.
  4. Chop the parsley if using.
  5. Add spaghetti to the boiling water and cook until al dente, about 10 to 12 minutes.
  6. Meanwhile, in a large bowl, beat the egg.
  7. Stir in the cream, parmesan, dry mustard, parsley, anchovy paste, and pepper until smooth. Set aside.
  8. In a large skillet, warm 2 tablespoons of olive oil over medium-high heat until hot but not smoking.
  9. Add the crushed garlic and sliced mushrooms; stir-fry until mushrooms are almost limp, about 5 minutes.
  10. Add the remaining 1 tablespoon of olive oil and the shrimp; stir-fry for 2 minutes.
  11. Add the chopped scallions and stir-fry until shrimp turn pink and opaque, 1 to 2 minutes longer. Remove from heat.
  12. Place a colander over a large serving bowl. Drain the hot pasta into the colander, allowing the residual heat to warm the serving bowl.
  13. Pour out any water from the serving bowl and return the drained hot pasta to the bowl.
  14. Immediately pour the beaten egg mixture over the hot pasta and toss vigorously to coat the pasta and gently cook the eggs.
  15. Add the shrimp and mushroom mixture to the pasta and toss to evenly distribute.
  16. Serve hot.
