Description

These Spam Stuffed Potatoes Florentine offer a comforting twist on the classic twice-baked potato. The dish combines fluffy mashed potatoes infused with Parmesan and skim milk, mixed with savory cubed SPAM, wilted spinach, and fresh thyme. The mixture is spooned back into the potato skins and topped with a blend of Monterey Jack and Cheddar cheeses. As they bake, the cheese melts into a golden, bubbly crust while the filling stays warm and hearty.

Directions

  1. Preheat oven to 350°F (177°C).
  2. Spray a shallow rectangular 2-quart baking dish with vegetable cooking spray.
  3. In a large nonstick skillet, sauté cubed SPAM in butter over medium heat for 3 minutes until lightly browned.
  4. Add chopped onion, thawed spinach, and thyme to the skillet; cook and stir for 2 minutes until onion is tender.
  5. Remove skillet from heat and set the SPAM mixture aside.
  6. Cut a thin slice off the top of each baked potato to create a lid.
  7. Carefully scoop out the insides of each potato, leaving a 1/2-inch thick shell intact.
  8. Place the hollowed potato shells upright in the prepared baking dish.
  9. Place the scooped potato flesh into a medium mixing bowl.
  10. Mash the potatoes until smooth, then beat at medium speed for 30 seconds to fluff.
  11. Add milk, Parmesan cheese, and pepper to the mashed potatoes; beat just until combined and creamy.
  12. Stir the reserved SPAM and spinach mixture into the potato mash until evenly distributed.
  13. Spoon the potato mixture back into the potato shells, mounding it slightly for a nice presentation.
  14. Bake uncovered for 25-30 minutes, or until the filling is thoroughly heated.
  15. Top each stuffed potato with a mix of shredded Monterey Jack and Cheddar cheeses.
  16. Return to the oven and bake for 5 minutes longer, or until the cheese is melted and bubbly.
