  2. In a large skillet, sauté chopped scallions in 2 tablespoons of the melted butter until softened, about 3-5 minutes.

  4. Grease a 13x9x2-inch baking dish.
  5. Place 8 pastry sheets in the bottom of the pan, brushing each sheet with melted butter as you layer them.
  6. Spread the spinach and cheese mixture evenly over the pastry layers.
  7. Top with the remaining pastry sheets, brushing each layer with the remaining melted butter. Ensure the top sheet is well buttered.
  8. Bake in the preheated oven for 1 hour and 15 minutes, or until the top is golden brown and crisp.
