  2. Wash the fresh spinach thoroughly. Place it in a large bowl, sprinkle heavily with salt, and tear the leaves into small pieces while rubbing the salt in.
  3. Rinse the spinach thoroughly to remove all salt, then drain well and squeeze out excess moisture.
  4. In a skillet, sauté the chopped onion and minced garlic in olive oil until softened and lightly browned.
  5. In a large mixing bowl, beat the eggs. Add the drained spinach, crumbled feta cheese, and the sautéed onion-garlic mixture.
