If using fresh spinach, place it in a large bowl, sprinkle heavily with salt, and rub the leaves between your hands to wilt them. Tear the leaves as you work.

Rinse the salted spinach thoroughly under cold water and squeeze out excess moisture using a clean kitchen towel or cheesecloth. If using frozen spinach, thaw and squeeze dry.
