Description

This rustic Spiced Apple-Cranberry Pie offers a delightful balance of sweet and tart flavors, perfect for autumn dinners or holiday gatherings. The filling combines tender, spiced cooking apples with bright, popping cranberries that have been simmered into a light syrup, creating a vibrant contrast in both color and taste. Encased in a simple, flaky refrigerated crust, this dessert is easy to assemble yet impressive to serve. The warm notes of cinnamon and nutmeg enhance the natural fruitiness, while a quick glaze of melted apple jelly adds a glossy finish.

Directions

  1. Preheat oven to 450°F (232°C).
  2. In a small saucepan, combine 1 cup of the sugar, the cranberries, and 1 tablespoon water.
  3. Cook over medium heat, stirring constantly, until a syrup forms and cranberries begin to pop, about 10 minutes.
  4. Remove from heat and set aside to cool slightly.
  5. On a lightly floured surface, unfold the pie crust and roll into a 12-inch circle.
  6. Place the crust in a 9-inch pie plate, allowing excess pastry to drape over the edge, and set aside.
  7. In a large bowl, toss together the sliced apples, the flour, the remaining sugar, the cinnamon, the nutmeg, and the salt.
  8. Stir the reserved cranberry mixture into the apple mixture.
  9. Spoon the filling into the prepared crust, folding the dough edges over the filling to create a rustic seal.
  10. Bake at 450°F (232°C) for 15 minutes.
  11. Reduce oven temperature to 350°F (177°C) and continue baking for 35 minutes, or until the crust is golden and the filling is bubbling.
  12. Cover the crust edges with foil if they begin to brown too quickly during baking.
  13. Transfer the pie to a wire rack to cool slightly.
  14. Brush the filling with the melted apple jelly and sprinkle with confectioners' sugar, if desired.
  15. Serve warm or at room temperature.
