Spiced Pumpkin Bars
Description
These spiced pumpkin bars combine whole wheat and all-purpose flours with canned pumpkin and dates for a moist, flavorful base. Topped with a maple-pecan glaze, they offer a satisfying balance of sweetness and spice. A perfect vegetarian dessert for fall gatherings or cozy afternoons.Directions
-
Preheat oven to 350F (175C). Grease and flour a 9x13-inch baking pan.
-
In a medium bowl, whisk together all-purpose flour, whole wheat flour, ground cinnamon, baking powder, baking soda, and salt.
-
In a large bowl, combine buttermilk, canned pumpkin, vegetable oil, vanilla extract, egg, egg white, and brown sugar. Mix until smooth.
-
Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped dates and ground nutmeg.
-
Pour the batter into the prepared pan and smooth the top.
-
Bake for 30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
-
While the bars are cooling, prepare the glaze: whisk together confectioner's sugar, 1 teaspoon vanilla extract, and maple syrup until smooth. Add more maple syrup if needed to reach desired consistency.
-
Once bars are cool, spread glaze over the top and sprinkle with chopped pecans.
-
Cut into 24 bars and serve.
