  1. Cut tofu into 1/2-inch cubes; place in a colander and let drain for 15 minutes.
  2. In a small bowl, blend 1 teaspoon soy sauce, dry sherry, and sweet bean sauce; add ground pork and stir to coat.
  3. Stir in 1 tablespoon of the salad oil; let the pork stand for 15 minutes.
  4. Heat a wok or wide frying pan over high heat.
  5. When pan is hot, add remaining 2 tablespoons salad oil.
  6. When oil begins to heat, add ginger and garlic; stir once.
  7. Add pork and stir-fry until meat is no longer pink (about 2 minutes).
  8. Stir in hot bean sauce.
  9. Add tofu, 3/4 cup water, and 2 tablespoons soy sauce.
  10. Cook for 3 minutes; then add green onions.
  11. Stir together the 2 tablespoons water and cornstarch in a small bowl.
  12. Pour cornstarch mixture into pan.
  13. Cook, stirring constantly, until sauce boils and thickens.
