This robust Mediterranean stew combines earthy chickpeas with vibrant kale and a blend of warming spices like cumin, thyme, and chili. The dish offers a rich, savory depth with a pleasant kick of heat, balanced by the natural sweetness of onions and bell peppers. It&# 226;€™s a comforting, plant-based meal that feels substantial enough for a cold evening yet light enough for everyday dining. Ingredients

Directions

  1. Soak dried chickpeas overnight in enough water to cover them by 4 inches. Drain and rinse thoroughly before use.
  2. In a large saucepan, combine the rinsed chickpeas and 10 cups of water. Bring to a boil, then reduce heat to a simmer. Cover partially and cook for 1 1/2 hours, or until the chickpeas are tender. Reserve the cooking liquid.
  3. In a heavy kettle or large pot, heat olive oil over moderate heat. Add chopped onions and minced garlic, stirring occasionally, until golden and fragrant.
  4. Add chopped bell peppers to the pot. Cook, stirring frequently, for 10 minutes until the peppers begin to soften.
  5. Add the cooked chickpeas along with their reserved cooking liquid, chopped kale, plum tomatoes with juice, tomato paste, chili powder, thyme, oregano, red pepper flakes, cumin, sugar, and bay leaf.
  6. Bring the mixture to a boil, then reduce heat and simmer uncovered for 1 hour, stirring occasionally, until the flavors meld and the stew thickens.
  7. Discard the bay leaf. Season with salt to taste. Serve hot over steamed couscous or rice.

Ingredient substitutions: You can substitute fresh kale with spinach or collard greens. If you prefer less heat, reduce the amount of chili powder and red pepper flakes.

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. The stew tastes even better the next day as the flavors continue to develop. Freeze for up to 3 months.

Tip: Ensure chickpeas are fully tender before adding the vegetables, as undercooked chickpeas will remain hard even after simmering with the stew.
