Note
Microwave Option: To cook in a microwave, reduce chicken broth to 1/4 cup. Crumble turkey into a 2-quart microwavable dish with onion and spices. Microwave on high for 3-5 minutes, stirring every 2 minutes, until turkey is no longer pink. Layer ingredients in a microwavable 8x8 dish as directed. Microwave covered loosely on high for 6-8 minutes, rotating dish 1/4 turn every 2 minutes. Let stand covered for 5 minutes before serving.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through.
Variations: Add diced bell peppers, jalapeños, or black beans to the turkey mixture for extra texture and nutrition. Use regular sour cream for a richer flavor.
Tip: If tortilla strips seem dry, lightly spray them with cooking spray before layering to help them crisp up slightly in the oven.
