The dish offers a satisfying balance of earthy vegetables and creamy cheese, making it perfect for family gatherings or cozy weeknight meals. Directions

  1. Preheat oven to 350°F (175°C).
  2. Cook lasagne noodles according to package instructions until al dente. Drain well and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic, chopped onion, chopped tomatoes, and sliced mushrooms.
  4. Sauté vegetables until the onion is translucent and mushrooms are tender, about 5-7 minutes.
  5. Add oregano, basil, rosemary, and chopped spinach to the skillet. Stir continuously until the spinach wilts and reduces in volume.
  6. Allow the vegetable mixture to simmer for 2-3 minutes to meld flavors, then remove from heat.
  7. In a large bowl, combine cottage cheese, grated Parmesan cheese, and half of the grated Mozzarella cheese.
  8. Pour the vegetable mixture into the cheese bowl and mix thoroughly until well combined.
  9. In an 8x13 inch baking pan, layer the cooked noodles alternately with the vegetable-cheese mixture, starting and ending with noodles if possible.
  10. Top the final layer with the reserved Mozzarella cheese and additional Parmesan cheese if desired.
  11. Bake uncovered for 30-35 minutes, or until the cheese is bubbly and lightly golden.
  12. Remove from oven and let the lasagne rest for 5 to 10 minutes before slicing and serving.
