-ultra-pasteurized Butter an 8 inch pie pan with 1 T butter and liberally coat the bottom and sides with kasha, leaving leftover kasha on the bottom of the pan. In a skillet over medium heat, cook spinach in remaining T of butter until just wilted and set aside. In a bowl beat together eggs, cream, salt, pepper and nutmeg. Stir spinach into egg mixture, pour into pie pan and top with cheese. Bake quiche in a preheated 375'F oven for 25 to 30 minutes or until set. If a very crisp crust is desired, set pan on top of stove over a low burner for a few minutes
