Spinach Stuffed Turkey Meat Loaf recipe image

This Spinach Stuffed Turkey Meat Loaf is a delicious twist on the classic comfort food, offering a lighter yet deeply satisfying option for dinner. The lean ground turkey is mixed with quick-cooking oats for texture and bound together with egg and milk, creating a tender crumb. The real star is the vibrant center: a mixture of sautéed mushrooms, onions, garlic, and fresh spinach combined with melted mozzarella and sharp Parmesan cheese. As it bakes, the savory filling warms through, creating pockets of creamy richness in every slice. The loaf is topped with additional mozzarella, which browns beautifully under the heat. It’s perfect for weeknight dinners, meal prep, or serving alongside roasted vegetables and mashed potatoes. The combination of earthy spinach and aromatic Italian herbs makes this dish feel elegant enough for company but easy enough for a busy Tuesday.

Ingredients

Directions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms, onions, and garlic. Sauté until mushrooms are tender and liquid has evaporated, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a medium bowl, combine the sautéed vegetable mixture, spinach, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 cup mozzarella cheese, and the Parmesan cheese. Stir until well combined. Set aside.
  4. In a large mixing bowl, combine ground turkey, quick-cooking oats, milk, egg, Italian seasoning, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper. Mix gently until just combined; do not overmix.
  5. Spoon two-thirds of the turkey mixture into the prepared loaf pan, pressing it down evenly to form a base.
  6. Using a spoon or your hands, make a 7x1 1/2-inch indentation lengthwise down the center of the turkey mixture.
  7. Fill the indentation with the spinach and cheese mixture, spreading it evenly.
  8. Spoon the remaining turkey mixture on top of the spinach filling. Press the edges of the top layer down slightly to seal in the filling.
  9. Bake in the preheated oven for 35 minutes.
  10. Sprinkle the remaining 1/4 cup mozzarella cheese over the top of the loaf. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly and the internal temperature of the turkey reaches 165°F (74°C).
  11. Remove from oven and let the loaf stand in the pan for 5 minutes before slicing. This helps it hold its shape.
