  1. Wash spinach well, drain and cut into coarse shreds.
  2. Plunge into boiling water and drain.
  3. Heat 2 tbs of butter and olive oil in pan.
  4. Add garlic and cayenne to taste.
  5. Cook over moderate heat for 2-3 minutes.
  6. Add raisins and pine nuts.
  7. Cook 2 minutes more.
  8. Mix into spinach until well blended.
  9. Arrange on a hot, flat ovenproof dish.
  10. Sprinkle cheese over top.
  11. Melt remaining butter and pour over the top.
  12. Brown quickly under the broiler
