Description

These Spumoni Slices are a nostalgic holiday favorite, inspired by the classic Italian ice cream. The dough is divided into three distinct flavors: rich chocolate, sweet candied cherry, and vibrant pistachio-green.   1. Preheat oven to 375&# 194;°F (190°C).
  2. In a large bowl, beat shortening and margarine or butter for about 30 seconds until softened.
  3. Add half of the flour, sugar, egg, 2 tablespoons milk, vanilla, baking soda, and salt.
  4. Beat until thoroughly combined, scraping down the sides of the bowl occasionally.
  5. Stir in the remaining flour until a uniform dough forms.
  6. Divide the dough into three equal portions.
  7. To the first portion, mix in the melted and cooled chocolate square and 2 teaspoons of milk. This is the chocolate layer.
  8. To the second portion, mix in the chopped candied red cherries. This is the cherry layer.
  9. To the third portion, mix in the chopped pistachios, remaining 2 teaspoons of milk, rum flavoring, and enough green food coloring to tint the dough a vibrant green. This is the pistachio layer.
  10. Line the bottom and sides of an 8x4x2 inch loaf pan with clear plastic wrap, leaving overhang for easy removal.
  11. Press the cherry dough evenly into the bottom of the pan to form the first layer.
  12. Press the chocolate dough evenly on top of the cherry layer.
  13. Press the green pistachio dough evenly on top of the chocolate layer.
  14. Cover the pan and chill in the refrigerator for 4 to 24 hours until firm.
  15. Invert the pan onto a work surface and carefully remove the dough log.
  16. Peel off the plastic wrap.
  17. Cut the log into 1/4-inch thick slices.
  18. Cut each slice crosswise into three smaller pieces.
  19. Place the pieces 2 inches apart on ungreased cookie sheets.
  20. Bake for 8 to 10 minutes, or until the edges are lightly browned.
  21. Remove from oven and cool completely on a wire rack.
  22. Optionally, drizzle with powdered sugar icing tinted green or with melted chocolate before serving.

Note

The dough must be chilled thoroughly before slicing to hold its shape and layers. If the dough is too soft, chill it again for 30 minutes before cutting.
