Beat the eggs in a mixing bowl until well combined.

Finely chop the onion, chilli, and curry leaves.

Add the chopped onion, chilli, curry leaves, salt, black pepper, and cornflour to the beaten eggs and mix thoroughly.

Heat the oil in a frying pan over medium heat.

Pour half of the omelette mixture into the hot pan.

Cook for a couple of minutes until the bottom is set and golden, then carefully flip over.

Cook the other side for another minute or two until firm.

Remove from pan and repeat with the remaining mixture to make a second omelette.
