Directions
-
Cream the softened butter in a mixer bowl with an electric mixer until light and fluffy.
-
Add the sugar and beat for about 5 minutes until well combined.
-
Sift the flour, cocoa, and salt together in a separate bowl.
-
Beat in the flour mixture and eggs alternately, beginning and ending with the flour mixture.
-
Add the vanilla extract and half-and-half cream, beating thoroughly until smooth.
-
Generously butter a 1 to 1 1/2-quart metal mold or Pyrex dish using 1 to 2 tablespoons of butter.
-
Pour the batter into the prepared mold.
-
Place a double thickness of buttered waxed paper over the top of the mold.
-
Cover with a double thickness of heavy-duty foil.
-
Tie the foil and paper tightly with heavy string, trimming to leave only about 1 inch of overhang.
-
If the mold has a lid, place it on top.
-
Place a rack in a steamer and add boiling water just to the bottom of the rack.
-
Place the covered mold on the rack.
-
Bring the water to a boil, then cover with the steamer lid.
-
Reduce heat to low and cook at a low boil for 2 hours, adding boiling water occasionally to maintain the water level just below the rack.
-
Remove the mold from the steamer and let it rest for about 2 minutes.
-
Remove the covers and unmold the pudding.
-
Dust generously with confectioners' sugar before serving.

Note
Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or serve at room temperature.
Serving Suggestions: Serve plain, with whipped cream, chocolate sauce, or brandy butter for added richness.
Steaming Tip: Ensure the steamer is large enough to accommodate the mold with plenty of space around it for steam circulation. Keep the water level consistent to prevent the pudding from drying out.
Ingredient Substitution: If you do not have half-and-half, you can use whole milk or heavy cream diluted with a little milk.
