  4. For clams: Place 2 cups of white wine and 2 tablespoons of smoke seasoning into the water pan, then fill the rest with water.
  5. Place clams on the preheated grill rack inside the smoker and cover.
  6. Check the clams after 15 minutes; they are done when the shells have opened.
  7. For shrimp and lobster: Sprinkle smoke seasoning over jumbo shrimp and lobster tails.
  8. In a bowl, mix 1/2 cup of melted butter with 1/2 cup of lemon juice and 2 tablespoons of grated lemon peel.
