  2. Grease eight 6-ounce pudding basins and place them on a swiss roll tin or baking sheet.
  3. Finely chop the dates and place them in a bowl.
  4. Pour the boiling water over the chopped dates.
  5. Stir in the vanilla essence, coffee essence, and bicarbonate of soda. Set aside to cool slightly.
  6. In a large bowl, cream the butter and caster sugar together until light and fluffy.
  7. Gradually beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  8. Gently fold in the self-raising flour until just combined.
  9. Fold in the date mixture, including all the liquid, until evenly distributed. The batter will appear wet and sloppy.
  10. Divide the batter evenly among the prepared pudding basins.
  11. Bake in the preheated oven for 25 minutes.
