Description

This authentic Greek Stifado features tender beef chuck braised with whole pearl onions in a rich red wine sauce.   1. Preheat oven to 350°F (177°C).
  2. Heat olive oil in a heavy 4- to 5-quart Dutch oven over medium-high heat.
  3. Cut the boneless beef chuck into 1-1/2-inch cubes.
  4. Toss the beef cubes with the all-purpose flour in a large bowl until evenly coated.
  5. Add the beef to the hot pan in batches and cook until browned on all sides, stirring occasionally, about 3 minutes per batch.
  6. Transfer the browned beef to a bowl and set aside.
  7. Add the peeled boiling onions to the pan and cook until lightly browned, stirring frequently, about 5 minutes.
  8. Add the chopped tomatoes, minced garlic, thyme, rosemary, oregano, bay leaf, and cumin to the pan. Stir to combine.
  9. Stir in the dry red wine and bring the mixture to a boil.
  10. Return the browned beef to the pot. Cover the Dutch oven and place it in the preheated oven.
  11. Bake until the beef is tender, about 2 hours.
  12. Remove from oven and stir the crumbled feta cheese into the stew.
  13. Return the pot to the oven and bake uncovered for another 10 minutes, until the cheese is heated through.
  14. Season with salt and freshly ground pepper to taste. Serve hot.
