Description

These Stilton Mille-Feuille tartlets are a sophisticated yet simple appetizer or light main course. The combination of sharp, creamy Stilton cheese blended with softened butter and cream creates a luxurious filling. Port wine-soaked golden raisins add a burst of sweetness and texture, while finely ground walnuts provide a crunchy contrast. The base is made from puff pastry, blind-baked until golden and crisp, then layered with the cheese mixture to create a delicate, flaky tower.

Ingredients

Directions

  1. Place the golden raisins in a small bowl and cover with port wine. Let them marinate for 30 minutes.
  2. Drain the raisins and gently pat them dry with paper towels. Set aside.
  3. Preheat the oven to 350°F (175°C).
  4. Roll out the puff pastry sheet and cut it into twelve 2-inch circles.
  5. Place the pastry circles on a greased baking sheet. Prick each circle several times with a fork.
  6. Place another baking sheet on top of the pastry circles to weigh them down.
  7. Bake for 8 to 10 minutes, or until the pastry is golden brown and cooked through. Remove the top sheet and let cool.
  8. While the pastry bakes, place the Stilton cheese and softened butter in a food processor. Blend until combined.
  9. Add the heavy cream and blend until the mixture is very smooth and creamy.
  10. Transfer the cheese mixture to a bowl and fold in the drained, marinated raisins.
  11. On four small plates, assemble the mille-feuille: place one pastry circle, top with 3 tablespoons of the cheese mixture, add another pastry circle, top with 3 tablespoons of cheese mixture, and finish with a final pastry circle.
  12. Brush the top pastry layer with the melted butter.
  13. Evenly sprinkle the finely ground walnuts over the top of each tart.
  14. Place the assembled tarts in the refrigerator for 10 minutes to chill and set.
  15. Meanwhile, heat the remaining whole walnuts in the oven for 1 minute until fragrant.
  16. Remove tarts from the fridge and arrange the toasted whole walnuts around the base of each mille-feuille for garnish. Serve immediately.
