In a bowl, combine lemon juice and soy sauce. Add the fish strips and let them marinate for 20 minutes.
-
Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat for 2 minutes.
-
Add the thinly sliced red pepper to the wok and stir-fry for 2 minutes.

-
Add the remaining 1 tablespoon of vegetable oil to the wok and heat over medium-high heat for 2 minutes.
-
Drain the fish, reserving the marinade. Add the fish strips to the hot wok and stir-fry for 2 minutes, or until the fish flakes easily with a fork.
-
Return the cooked vegetables to the wok with the fish.
-
In a small bowl, combine the cornstarch, water, salt, pepper, and the reserved fish marinade. Stir until smooth.
-
Pour the sauce mixture into the wok and cook for 2 minutes, stirring constantly, until the sauce thickens slightly.

Note
The original recipe included "Sliced fresh mushrooms" as a step, which has been moved to the ingredients list and incorporated into the cooking process.
For best results, ensure your wok or skillet is very hot before adding the fish to achieve a nice sear.
If you don't have catfish, you can substitute with other firm white fish fillets like cod, tilapia, or halibut.
Feel free to customize the vegetables based on what you have on hand. Broccoli florets, carrots, or bok choy work well in this stir-fry.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet to maintain texture.
