  1. Slice pork butt across the grain into strips 2 inches long, 1/4 inch wide, and 1/8 inch thick.
  2. Wash asparagus and trim the tough white ends from the stalks.
  3. Cut asparagus into 2 1/2 inch segments; if stalks are thick (3/4 inch or more), cut on a bias for even cooking.
  4. Heat peanut oil in a wok or large skillet over high heat until it just begins to smoke.

  9. Uncover, turn up heat, and push ingredients to the side to pool the liquid.
