Description
This versatile stir-fry offers a delicious choice between tender extra-firm tofu or sliced flank steak, paired with sweet, caramelized onions and aromatic ginger. The dish is marinated in a blend of sherry, soy sauce, and sugar, then quickly stir-fried to maintain texture and flavor. Finished with a light cornstarch slurry for a glossy sauce that clings to every bite. It’s an excellent weeknight dinner option that pairs beautifully with steamed rice or noodles. Whether you prefer plant-based or meat, this recipe delivers rich, umami flavors with minimal effort.Directions
-
Prepare the tofu by slicing it lengthwise into half-inch blocks. Place between paper towels and press with a heavy object to remove excess water.
-
In a shallow dish, mix together the sherry, salt, pepper, soy sauce, sugar, and 1 1/2 teaspoons of oil.
-
Add the tofu (or beef shreds if using meat) to the marinade and let sit for 15 minutes.
-
In a small bowl, mix the cornstarch with the stock until smooth. Set aside until needed.
-
Heat 2 1/2 tablespoons of the remaining oil in a wok or large pan over high heat.
-
Add the ginger and sliced onions. Stir-fry for about 1 1/2 minutes until softened.
-
Remove the onions and ginger from the wok and place in a colander to drain. Set aside.
-
Reheat the wok over high heat until very hot. Add the remaining oil if needed.
-
Add the marinated tofu (or beef) and minced garlic to the wok. Stir-fry until browned.
-
Return the drained onions and ginger to the wok. Stir-fry for another minute.
-
Stir in the cornstarch mixture. Cook, stirring constantly, for about 30 seconds or until the sauce thickens.
-
Serve immediately while hot.
