  3. Rinse and dry sweet potatoes well.
  4. Place potatoes on baking sheet and bake 55 to 60 minutes or until tender.
  5. Do not turn off oven.
  6. Cool potatoes until easy to handle.
  7. When potatoes are cool, cut in half lengthwise.
  8. With spoon, scoop out pulp from 8 potato halves into large bowl and discard skins.
  9. Scoop out pulp from remaining 8 potato halves, leaving 1/4 inch potato intact on skin to

  11. Place pulp in same large bowl; return potato shells to same baking sheet.
  12. With electric mixer,
  13. beat potato pulp, orange juice, 2 T butter, the cinnamon, and salt until smooth.
  14. Place potato mixture into large pastry bag fitted with star tip; pipe into potato shells, spiraling mixture above shell

  16. Sprinkle remaining 1 T melted butter and the brown sugar over stuffed potatoes.
  17. Bake 10 to 15 minutes until potatoes are heated through.
