-
Preheat the oven to 400°F (200°C).
-
Peel the garlic cloves and lightly crush them with the side of a knife to release their flavor.
-
Make small incisions throughout the boneless leg of lamb and insert the crushed garlic cloves into the pockets.
-
Prepare the stuffing according to your preferred recipe.
-
Place the stuffing inside the cavity of the lamb leg and tie the meat securely with kitchen twine to hold its shape.
-
Rub the outside of the lamb generously with chopped fresh rosemary, salt, and pepper.
-
Place the stuffed lamb on a roasting rack set inside a roasting pan.
-
Roast in the preheated oven for 1 hour 45 minutes to 2 hours, or until an instant-read thermometer inserted into the thickest part registers 135°F to 140°F (57°C to 60°C) for medium-rare.
-
While the lamb is roasting, prepare the sauce. Discard excess fat from the roasting pan, leaving the flavorful drippings.
-
Place the roasting pan on the stovetop over medium heat. Add the red wine and brown stock, scraping up any browned bits from the bottom of the pan.
-
Bring the liquid to a simmer and reduce by half, about 5-7 minutes.
-
Stir in the chopped tomatoes and slivered olives. Simmer for another 5 minutes until the tomatoes soften.
-
Season the sauce with salt and pepper to taste.
-
Remove the lamb from the oven and let it rest on a cutting board for 15-20 minutes before slicing.
-
Just before serving, stir the fresh parsley into the pan sauce.
-
Slice the lamb and serve with the warm tomato-olive sauce poured over the top.
