Ingredients

Directions

  1. Cut about one inch off the top of the cantaloupe and reserve it to use as a lid.
  2. Clean out the inside of the melon, removing and discarding the seeds.
  3. Using a long-handled spoon, scoop out 1 cup of the center pulp and chop it finely; set aside.
  4. In a heavy skillet, melt the butter over moderate heat.
  5. Add the ground meat and chopped onion; saut until browned, stirring frequently.
  6. Add the rice, pine nuts, currants, 1 tablespoon of sugar, cinnamon, salt, chopped melon pulp, and water; mix well.
  7. Cook the mixture, stirring occasionally, until the liquid in the pan is absorbed.
  8. Remove the skillet from heat and allow the stuffing to cool to room temperature.
  9. Sprinkle the inside of the hollowed melon with the remaining 1/2 tablespoon of sugar.
  10. Spoon the cooled meat stuffing into the melon cavity.
  11. Cover the melon with the reserved top and secure it with wooden picks.
  12. Place the stuffed melon in an oiled baking pan just large enough to hold it comfortably.
  13. Bake at 350F (177C) for one hour, or until the melon is tender.
